Preparing pilau the Swahili way

Pilau
This is a very quick and easy recipe to prepare pilau. I chose this because I didn’t have many groceries. I didn’t have any vegetables other than onions. I had rice and meat. I never lack ginger and garlic. Luckily, I had pilau masala, soy sauce, and salt and that’s all I needed.
Equipment
- Cooking pot
- Cooking stick
- Knife
- Chopping board
- Pestle and mortar or grater
- 1 plate
- 1 bowl
Ingredients
- 4 tbsp Cooking oil
- Salt to taste
- 2 tbsp pilau masala
- 1 inch Ginger
- 6 Cloves of Garlic
- 1 cup Pishori rice
- ¼ kg Goat meat
Instructions
- Boil the meat till tender. Apart from being a delicious high protein red meat full of vitamins and minerals🤤, goat meat also takes a shorter time to cook compared to beef.
- Meanwhile, unpeel the ginger, garlic, and onion. Dice the onions, pound the ginger and garlic using a pestle and mortar. You can also use a grater to grate your ginger and garlic.
- When the meat is tender and you still have the stock, drain and preserve it for later use.
- Now that you have drained the stock and set aside the meat on a plate, use the same cooking pot to fry your onions in the cooking oil.
- When they’re about to turn golden, toss in ginger and garlic, fry till golden brown.
- Add pilau masala, salt, and soy sauce, keep stirring.
- Add your rice and meat and let them fry for a minute while you keep stirring.
- Add your stock. The liquid you’re adding should double the number of cups of rice. Mine was one cup of rice and I had 1 cup of stock so I added 1 cup of water too.
- Just when it starts to boil, reduce the heat and cover the pot.
- Once it is nice and dry it’s ready to be devoured🤤.
