Delicious yet fast and easy to prepare tomato pasta

- 4 tomatoes
- 1 Onion (medium sized)
- 1 garlic clove
- 1 tbsp olive oil (or vegetable oil)
- 300 gms pasta
- Black pepper (ground)
- 4 tbsp cheddar cheese (grated)
Cook the pasta in boiling water
Peel and chop the onion(s) and finely chop or crush the garlic
Heat the oil in a saucepan and add the onion and garlic
Gently fry over medium heat until soft
Chop the tomatoes or crush them and then add them to the saucepan and simmer gently for about 7 minutes
Drain the pasta, then add to the sauce and sprinkle the grated cheese on top
Serve with a side salad
