Ingredients

  • 3 cups All-Purpose Flour
  • 1 tbsp Margarine
  • 1/4 cup Sugar
  • 1 cup Buttermilk (or 1 cup Fresh Milk and 1 tablespoon Lemon Juice)
  • Oil (for frying)
  • 3 tsp Baking Powder
  • 1 tsp Cardamom powder (you can use cardamom seeds as well)

Instructions

  • Mix 3 cups of flour, lemon zest, margarine, 1/4 cup of sugar, a pinch of salt, cardamom powder, and any spice of your liking in a bowl. Be sure to ensure that the margarine is completely mixed up with the flour.
  • Make a “well” at the center of the flour mixture (from step 1) and add the buttermilk and then mix them up together to form a dough.
  • Knead for about 5 minutes or until the dough is soft and smooth on the surface.
  • Cover the dough with a plastic bag, cling film, or with a damp kitchen towel and allow it to rest for an hour or so (at the very least it should be allowed to rest for 30 minutes).
  • Roll the dough on a lightly floured surface (sprinkle some flour on the flat surface you intend to roll the dough on) into a 1cm thick piece.
  • Using a sharp knife, cut the dough into the desired sizes of your mandazis.
  • Heat up the oil in a pot and gently dip the cut pieces of the dough to cook. The side dipped in first should turn light brown to indicate the time you need to turn to the other side.
  • Once both sides are cooked, remove your mandazis using a spider strainer.
