Ingredients
2Eggs, as fresh as possible, preferably organic and free-range, room temperature
¼cup Cheese (shredded)
½tspFresh ground black pepper
½tspWater
½tbspButter
⅛tspSalt
Instructions
In a bowl, crack and place the eggs and whisk vigorously together with the salt, pepper and water.
Heat a small pan over just below high heat and add the butter and swirl the pan to fully coat
When the butter becomes like foam pour in the mix from step 1.
After 15 seconds, when a skin starts to form, add the cheese in a row. Immediately, using a spoon on the edge of the egg, release the eggs from the pan.
Pull the eggs up and tilt the pan to spread out any uncooked egg and allow it to cook. And using the spoon, roll the eggs up and over the cheese
Cook for another 10 seconds, until the outside is a golden but pale and the inside is soft. To have a harder omelette, cook for several seconds more.
Place a plate on the counter and grab the pan handle and quickly turn it upside down over the plate allowing the omelette to roll onto the plate and fold into a roll.
