Peach Popsicles Recipe

Ingredients

  • 3 Peaches
  • ½ cup Fresh lime juice (119ml)
  • 0.3 cups White rum (81ml)
  • 5 slices Peach (thin slices) - optional

Simple Syrup

  • 0.25 cup water (60ml)
  • 4 tbsps Sugar

Instructions

  • Make the simple syrup by mixing the ¼ cup of water with the sugar to a boil then simmer for about 2 minutes.
  • Blend the peaches and simple syrup until the mixture is smooth.
  • Add the lime juice and rum and gently stir to mix.
  • Pour the mixture into popsicle molds. Leave room at the top as the popsicles will expand once they freeze. Optionally, you may place the thin slices of peach into each of the molds.
  • You may need to freeze for a short while before inserting the popsicle stick that way they stick to the center of the popsicle.
  • Place the molds in the freezer and freeze for about 1 - 1½ days.
  • Remove the mold and wait for about 3-5 minutes before unmolding. Serve!
