Ingredients
2cupsBasmati Rice
2tspsSalt
500mlCoconut Milk
500mlWater
Instructions
Wash and rinse the rice.
Put the rice, salt, coconut milk and water in a pan. Bring the ingredients to a boil, stirring occasionally.
Once boiled, reduce heat then cover and simmer gently until for about 20 minutes.
Fluff the rice and serve.
Notes
It's not mandatory to use Basmati rice but in my experience it's a great one to go with when preparing coconut rice. When using a rice cooker, use 1/2 less cup of water and simmer for about 5 to 10 minutes.
